Citrus Herb Roasted Chicken + Video

Learning to break down a whole chicken is much more cost effective than buying chicken parts. Many have the misconception that parts of the chicken will “go to waste” if it’s not the parts they are using for their meal. All leftover bones or any undesirable parts can be easily turned into homemade batch of chicken broth.

Citrus Herb Roasted Chicken
Makes 8 servings

 

Ingredients:

1 (5 pound) whole chicken
1/4 cup olive oil
4 cloves garlic, minced
1 tbsp sugar
2 lemons
2 oranges
1/2 tsp paprika
1 tsp dried onion
1/2 tsp crushed red peppers
1 red onion, diced
2 tbsp fresh rosemary, chopped
salt and pepper

Directions:

1. Break down the chicken into parts: 2 breasts, 2 thighs, 2 drumsticks, and 2 wings. Pat dry. Gently lift the skin, and season with salt and pepper.
 
2. In a small bowl, whisk together the olive oil, garlic, sugar, 1 lemon juiced, 1 orange juiced, paprika, dried onion, red pepper flakes, and salt and pepper.
 
3. In a shallow pan or large ziplock bag place the chicken parts and the marinade together and let sit in the refrigerator to marinate for 30 min – 1 hour.
 
4. Preheat the oven to 400 degrees F. In a 13 x 9 inch baking dish evenly spread the onion pieces. Place the chicken, skin side up, on top of the onions. Pour the remaining marinade mixture evenly throughout the pan.
 
5. Sprinkle on the rosemary and slices of the remaining lemon and orange.
 
6. Bake uncovered for about 1 hour or until cooked to 165 degrees and juices run clear.
